Pre-heat oven to 200ºC and line 12 muffin pans with paper muffin cases. Combine flour, sugar and salt in a bowl and make a well in the centre. Mix in Moro Delicado Light Taste Olive Oil, eggs, milk and vanilla until just combined. Spoon into muffin cases and bake for 15-20 minutes until golden. Turn out onto a cooling rack and serve warm or cold.
Brush or spray the tops of the warm muffins with a little Moro Delicado Light Taste Olive Oil and dip in caster sugar for a delicious topping.
Once you master the basic recipe, try these variations:
Banana and Blueberry
Add 1 mashed banana and ½ cup frozen blueberries to the mixture.
Orange and Poppyseed
Substitute the vanilla extract with 2 teaspoons grated orange rind and add the juice of one orange and 1 tablespoon poppy seeds to the mixture.
Chocolate Choc Chip
Reduce self-raising flour to 1¼ cups and add ¼ cup cocoa, ¼ teaspoon baking powder, 1 teaspoon cinnamon and 2 tablespoons choc chips to the mixture. Serve dusted with icing sugar.
Peach and Coconut
Substitute the vanilla extract with 1 teaspoon grated orange rind and add ½ cup shredded coconut to the mixture. Spoon into muffin cases and arrange thin slices of fresh peach on top of each before baking.
